Bake With Me // Almond & Apricot Breakfast Muffins

 I'd like to start all my mornings with homemade breakfast muffins and these Almond & Apricot Muffins are my current favourite. They are exactly what you want from a breakfast baked good - easy to make and completely delicious..

Ingredients // (makes 6 large muffins)
    100g plain flour
    2 level tsp baking powder
    sprinkle of salt
    50g butter  
    1 large egg
    1 tbsp milk
    2 tbsp orange juice
    50g ground almonds
    150g apricot jam plus 1 tbsp
    50g dried apricots 

Recipe //
  1. Preheat the oven to 200c and put muffin cases in the muffin tin.
  2. Melt the butter in a heatproof bowl and leave to cool slightly. Then whisk in the egg, milk, orange juice and ground almonds.
  3. Sift the plain flour, baking powder and salt into the wet ingredients.
  4. Fold the sieved dry ingredients into the wet ingredients till just combined - over-stirring will result in dense muffins!
  5. Add the apricot jam and chopped dried apricots into the batter and fold through gently - again don't over-stir.
  6. Spoon the mixture amongst the muffins cases.
  7. Bake in the middle of the oven for 15-20 minutes. A skewer should come out clean when inserted and the muffins should still be spongey to the touch.
  8. Leave too cool slightly. Melt a tablespoon of apricot jam slightly and then brush over the muffins.
  9. Serve and enjoy..
